Simple Yellow Split Peas Dhal/Dal/Daal

Traditional Indian side dish of split peas

Yields1 Serving
 16 oz yellow split peas
 5 tbsp Olice Oil
 3 tbsp minced garlic
 1.50 tsp cumin
 5 cinnamon sticks
 15 cloves
 2 cups chopped onion
 2 tbsp finely chopped ginger
 1 tbsp tumeric
 1 tbsp cardamom
 1 tbsp coriander
 ½ tbsp ghram masalla
 1 tsp paprika
 1 tsp cayanne
 1.50 tsp salt
 ½ tsp black pepper
 2 medium tomatoes, chopped
 2 tsp thyme
 ¼ cup cilantro chopped
 1 Lemon - juiced
Cook the Split Peas

Add

1. 2 quarts of water,
2. 1 1/2 tbs of Garlic
3. 2 tbs of olive oil

to a large stockpot

Rinse split peas and add to the stock pot. Boil over medium heat for 1 hour.

Prepare the seasoning (after the peas have cooked)

Sautee over a medium heat in 3-4 tablespoons of olive oil:

1. Onion
2. Cumin
3. Cinnamon sticks
4. Cloves

sautee until the onion becomes translucent

Carefully remove the cloves

Turn the heat back on the peas and bring to a simmer

Add and continue to sautee

1. Tomato
2. Ginger
3. Garlic
4. Tumeric
5. Cardamom
6. Coriander
7. Paprika
8. Cayenne
9. Cilantro
10. Thyme
11. Salt
12. Black pepper
13. Lemon juice

Sautee until the tomatoes are fully cooked (typically 8-12 min). You will need to stir the pot once a minute or so.

Add sauteed spices to the peas and mix well

Allow to simmer for 5 minutes

Taste the Dhal and adjust the salt, turmeric, and cardamom to your desire.
