Recipe Ingredients

1.50 cups warm water (about 100 degrees fahrenheit)
 2 ¼ tsp yeast (1 packet)
 2 tsp coarse salt
3 ¼ cups unsifted All purpose flour

Cooking Directions

1

Add warm water, salt and yeast to a large bowl

2

Add all 1 1/2 cups of flour to the bowl and mix it into a pancake batter consistency

3

Add the remaining flour

4

Mix with a wooden spoon until there are no patches or pockets of dry flour. It may take 3-5 minutes to mix in all the flour. You may be tempted to add more water, DO NOT, just keep mixing until all the flour is absorbed

5

Cover the dough with damp paper towels or kitchen towel and allow the dough to rise for 2-3 hours.

6

Parchment line two 9 inch cake pans

7

Turn the dough out on a floured surface. The dough will be sticky

8

Divide the dough until you have 12 roughly equal-sized pieces

9

Generously flour each of your hands

10

Pick up one of the 12 portions of dough

11

Stretch the edges of the dough around to the bottom and middle of the dough ball on all sides, rotating the dough in your hands as you do so. (The bottom of the ball will look like a bunch of bunched ends.) Do this until the top of the dough ball is smooth.

12

Place dough ball in the center of the cake pan

13

Repeat this process with all the dough balls placing the 1 inch apart in the cake pan.

You may end with 1 pan having 7 and the other having 5

14

Cover with damp paper towels and allow them to rest for 40-45 minutes.

Baking
15

Place a roasting pan (or any metal pan) on the bottom rack of your oven.

16

Preheat oven to 450 degrees for 30 min

17

Boil 2 cups of water

18

After the 30min oven pre-heat, place both cake pans into the oven

19

Pour 2 cups of water into the roasting pan on the bottom self of your oven and close the oven door quickly.

Pouring water into the scorching hot pan will produce an instant seam which we want to capture in the oven.

20

Bake for 14 minutes

21

Reduce temperature to 375 degrees F and remove the pan with the water

22

Bake an additional 10-13 minutes or until golden brown.
